INGREDIENTS
- 4 Chicken Breasts (bone-in, with skin)
- 1/4 cup Vasara Cold Pressed Olive Oil
- 2 Lemons, one juiced and one sliced
- 4 Cloves Garlic, minced
- 1 tbsp Dried Oregano
- 1 tbsp Dried Thyme
- Salt and Freshly Ground Black Pepper to Taste
- Fresh parsley, chopped, for garnish
INSTRUCTIONS
Step 1: Preheat your oven to 400°F (200°C).
Step 2: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Step 3: Rinse the chicken breasts and pat dry. Place them in a baking dish.
Step 4: Pour the olive oil mixture over the chicken, ensuring each piece is well-coated. Arrange the lemon slices around and on top of the chicken.
Step 5: Let marinate for at least 30 minutes, or for best results, cover and refrigerate for a couple of hours.
Step 6: Place the marinated chicken in the preheated oven and roast for 25-30 minutes, or until the chicken is golden brown and cooked through.
Step 7: Halfway through the cooking, moisten the chicken with the pan juices.
Step 8: Remove from the oven, let rest for a few minutes. Garnish with fresh parsley and serve hot with a side of roasted vegetables or a fresh salad.
